Would you stop eating chicken altogether if there was a vegetarian alternative that tasted just like it? I mean, exactly like it? Well, scientists at the University of Missouri are betting that people would, and they've set out to create a chicken substitute solely out of soy--and with increased health benefits to boot.
Scientists are attempting to get the soy product to not only taste like chicken, but to look and feel exactly like it as well. Which would give even hardcore chicken-eating advocates some difficulty in refuting, if the researchers are successful. And it's inching in that direction--instead of simply adding flavor to soy, as is most commonly done, the scientists are experimenting to give it a more fibrous, chicken-like material.
Another key tenet of the project is that it must be low-cost to produce as well. If you're getting the sense, this is quite an undertaking.
Here's Science Daily on how much the scientists are attempting to perfect the soy/chicken hybrid:
To create the soy chicken, Hsieh starts with a soy protein extracted from soy flour. The soy then goes through an extrusion cooking process that uses water, heat and pressure while pushing the mixture through a cylinder with two augers.
"This particular soy substitute is different because we are working with a higher moisture content, which is up to 75 percent," Hsieh said. "The high moisture content is what gives the soy a very similar texture to chicken -- in addition to the appearance."
This is good news--soy is very healthy, containing soy protein, important fatty acids, and yet no cholesterol. If a viable substitute for chicken could be filled with easy-to-produce soy, we'd be one step closer to shutting down resource intensive (and often cruel) factory farms and moving Americans toward a healthier diet in general.
If you ask me, it's time to serve up the soy chicken.
