Hello, I have found this recipe and it seems to be interesting. I copy it here:
Raw Cashew Mozzarella

Ingredients:
3/4 cup of water
3/4 ounce of Irish moss
1 cup of soaked cashews
3/4 tsp of Himalayan Salt
1/4 cup of Coconut Oil
Directions:
First rinse your Irish Moss under cold water, then soak the Irish moss in cold water in the fridge for 24 hours. After the 24 hour period, it's ready for this recipe.
Add 3/4 cup of water to your high speed blender and drop in your soaked Irish moss. Blend on high speed till the Irish Moss is broken down into a gel.
To the blended Irish Moss add 1 cup of soaked cashews, 1/4 cup of coconut oil and 3/4 tsp of Himalayan salt. Blend till smooth.
After all of the ingredients are incorporated, pour your mixture into a wide base metal pan and refrigerate for 20 minutes or until the mixture has firmed up.
Enjoy with basil leaves and tomato slices.

I haven't found Irish moss in any shop so I used agar-agar instead of it. It means that the cashew mozzarella on the photos I attach is not raw, just vegan. I added to it some spices, too:
