Hola a todos, quería compartir esto con vosotros por dos motivos:

Vi el discurso que muchos ya habréis visto de Gary Yourofsky http://www.youtube.com/watch?v=ZzvK5uLu7F0 sobre el veganismo, y luego le mandé un email preguntándole sobre la vitamina B12, es decir, qué fuentes fiables recomienda él, si toma suplementos de esta vitamina, etc...
Y me ha contestado (muy rápido, se agradece ) lo siguiente:
After 16 years of veganism, without taking a single vitamin, my B12 level was checked on October 24, 2012. It was 543 pg/mL. The normal range is between 271-870.
The human body only needs three micrograms of B12 per day, and the bacteria in our mouth and intestines produce it naturally (see links below). B12 is also produced in the earth's soil, which is why some animals have trace amounts of B12 as they eat dirt when they eat off the ground, and animal-feed is never washed. However, attempting to get trace amounts of B12 by eating animal products is inefficient and deadly because B12 is destroyed by heat, and animal products contain disease-causing compounds like cholesterol, saturated fat, trans-fatty acids, casein and animal protein. The heat destruction oexplains why 99 percent of people with B12 deficiencies are meat, dairy and egg-eaters. The other 1 percent are junk-food vegetarians/vegans. The latter groups are also at risk for many ailments because health cannot achieved with cheese, eggs, Ruffles, Oreos, french fries and white rice/bread/pasta. Non-junk-food veganism causes no disease. It is preventative medicine, the treatment and the cure. And there's a reason why the term 'B Complex' was created. It's because any plant product containing a B vitamin actaully has ALL the B vitamins, including 12.
The best way to get B12 is to eat unwashed organic fruits and vegetables with some soil intact. The best sources are barley, beans, chlorella, dulse, grains (all), grapes (concord), kelp, mustard greens, nori, nuts, plums, prunes, sauerkraut (unpasteurized), seeds (all), soy, spirulina, sprouts (all), wheatgerm and wheatgrass. You can also add Red Star nutritional yeast to your meals.
Viene a decir en resumen que él nunca ha tomado suplementos, que tiene un buen nivel de b12 (aunque tengo entendido que esto se da en muchos veganos y en otros no), que la vitamina b12 se destruye con el calor, por lo que las personas que comen carne y la cocinan, en ocasiones pueden sufrir deficiencia de b12 y que además podemos encontrar b12 en la fruta ecológica sin lavar y vegetales con tierrecilla.
Fuentes de b12 que cita: cebada, judías/alubias/frijoles, alga clorela, alga dulse, todos los granos, uvas concord, alga kelp, mostaza, alga nori, nueces, ciruelas, pasas, chucrut sin pasteurizar, todas las semillas, soja, spirulina, todos los brotes, germen de trigo, el jugo wheatgrass (que se saca del pasto, de los brotes del pasto de trigo). Y al parecer una levadura de la marca Red Star.
El tema de la B12 me tiene un poco confundida, porque tomo suplemento desde hace 3 días pero sigo informándome y me encuentro con esta respuesta... No sé
¿Qué pensáis?

Creo yo que a estas alturas sabemos todos que ninguna de ésas son fuentes fiables de B12 y recomendar no suplementar es bastante peligroso por más que algunas personas insistan en que no es necesario.
Digo lo mismo que Vellocinodeoro.

Lo curioso es, que en la tienda que compro normalmente, uno de los dueños es vegano, tiene ya cierta edad y cuando le pregunté por la b12 como suplemento, me dijo que el chucrut y los germinados eran los que toda su vida habían cubierto su dosis de b12...
Y Gary me ha gustado mucho todo lo que he visto y leído de él, su web está chulísima y las recetas y todo. Que me diga algo así me ha dejado un poco fría, porque yo también soy de las que a mis conocidos y amigos interesados en el tema, les recomiendo suplemento de b12.
Está claro que los alimentos que cita son buenísimos, ricos en vitaminas y aminoácidos esenciales, pero la b12..............
