    Christine "Peanut" Vardaros

Pro cyclist, vegan, and writer for magazines/sites like Cyclocross Magazine, Cyclingnews.com, Ladies Cycling Magazine and VegNews Magazine.

JN: You are a devoted vegan. Why is this lifestyle so attractive to you, and does it ever become difficult to manage while traveling for races?

CV: I have been vegetarian for about twenty years and vegan about ten. I became vegetarian on a whim. But then I became vegan through an educated decision to improve my health. I used to suffer badly from allergies and asthma, but getting off milk products really helped a lot. Since then I have learned a lot about the moral ramifications of eating animals which keeps me strict about my diet. Sometimes it’s tough to travel, especially when I raced in France for a French team where nobody spoke English. Trying to explain that you don’t want butter on your pasta was sometimes impossible. I ended up eating only French bread at some meals but I survived just fine.

My vegan diet is pretty simple – I eat foods that are found at any generic supermarket, no funny foods. So when I am traveling on my own or just with Jonas for a cross race, I usually don’t have a problem. And Jonas speaks French so we are covered there too.

JN: You are a spokesperson for Organic Athlete. What does this group represent, and why have you chosen to lend yourself to its cause?

CV: They are a group of athletes who promote a vegan diet for sports. They spread the word that a plant-based diet is not only healthful but ideal for those who want to get the most out of their bodies. I easily agree with them. On a vegan diet, I notice that I recover after races or hard rides a lot easier, I am rarely sick, and have lots more energy.

I am also a spokesperson for In Defense of Animals, an international animal rights organization that protects the rights of all animals from your cat to elephants.

JN: In February, you spoke at the ECOPOP fair. What was this experience like?

CV: That was something strange. I was there to talk about the ecological impact of a person’s diet. As a vegan diet has the smallest ecological footprint, I assumed that everyone would know my talk would be about a plant-based diet. But after looking around the fair at the fur and leather-wearing participants , I quickly realized that maybe they were looking for a talk about organic meats and milk. So I tried to edit my talk as I went along to make it a little more general while holding true to my beliefs which turned out to be a disaster. I ended up just sounding a little scattered. Oops. Only later did I find out that half of the audience came there to hear me talk about veganism.

How and why did you go vegan?

I went vegan because I don’t think it is right to exploit animals in any way for my benefit. I have discovered so many other foods which are very nutritious and tasty and have helped me not only feel good but also enhance my athletic ability. I have eaten animal products in the past but ever since I cut them out of my diet I have felt more energetic and also feel better morally.

Did you encounter any difficulties? If so what were they and how have you dealt with them?

I have never really encountered any difficulties with eating a vegan diet or following a vegan lifestyle. There are certain things, especially being involved in bodybuilding, that are not often vegan friendly, like weightlifting belts, supplements and tanning products. Having to look for alternatives for these have been the only difficulty that I have come across. The food itself has never been a problem.
¿Encontraste alguna dificultad?

What are some of your favourite meals, takeaway or home cooked?

During my dieting season I tend to eat a lot of tofu, broccoli, spinach and protein brownies. The brownies are made with sunwarrior brown rice protein powder, almond butter, flax meal, walnuts, cinnamon and almond milk.

Off season I like to eat vegan schnitzels, lentil burgers, pita wraps with hummus and salads. For treats I like tofutti cuties, tart n’ round peanut caramel balls, vegan pizzas, vegan lasagna/parmigiana, vegan dark chocolate and raw food bars.

Have you encountered any absurd stereotypes, comments or negative attitudes?

Being involved in the bodybuilding industry I come across a lot of ‘meat heads’ who believe that they need to eat kilo after kilo of meat to put on muscle. These individuals are clearly misinformed and rely on magazines and outdated information.

Is there anyone who has particularly inspired or helped you?

I have undertaken a lot of my own research with respect to bodybuilding and nutrition however with respect to powerlifting, MVS (Melbourne Vegan Strength) have been really supportive.

    Ricky Williams

Williams said when he goes out to dine, ``I have to order sides because I'm a vegetarian. Now I can order entrees.''

    1. When and why did you choose to stop eating animal products?

I switched to a vegan lifestyle in 1998. At the time, I was an actor in Los Angeles and was concerned with keeping the signs of aging at bay. Since that time, I have experienced a complete physical and emotional transformation. I could now cite numerous reasons for choosing this lifestyle, such as animal cruelty, health, environmental impact, and most recently, improved athletic performance.

My transformation took another leap forward in 2004 when I became a raw vegan, excluding all cooked and processed foods. This choice was motivated by a desire to improve my health, but the impact has been all encompassing. The vitality and energy that I now experience are remarkable, I feel like I’m twenty years old again.

    2. What has been your experience as a vegan athlete? Have you noticed any performance or health benefits or problems?

Moving to a raw vegan diet was the best choice I’ve ever made as an athlete. My endurance has dramatically improved, and I recover from hard training and races in less than half the time. I’ve had to stop doing upper body workouts at the gym, because I now build muscle too quickly, which slows me down as a runner. My asthma is gone and I’m no longer troubled by joint pain.

    3. Have teammates and other athletes been supportive or critical?

Initially other athletes were critical, but seeing my rapid improvement has made them very curious. Now I get frequent inquiries about what “power foods” to eat during training and racing. I tell them that it’s not what you eat but rather what you DON’T eat that makes all the difference.

    4. A brief history of your athletic career.

It seemed as though my dreams of athletic glory as a runner and cross country skier had come to an end in 1989. Chronic knee and ankle pain, caused by numerous injuries, coupled with a severe case of exercise induced asthma, finally got the better of me. Over the next several years, I made a few attempts at training, but would quickly succumb to my injuries and asthma. In the mid 90’s I finally gave up any hopes of ever competing again, and sadly, of ever being in any kind of shape again.

It wasn't until November 3rd of 2005, my one year anniversary of becoming a raw vegan, that I decided to give it one more try. During the course of that year, my body had completely transformed. I was experiencing levels of energy equal to or greater than those that I had felt in my teens. Was this real or was it all in my head? I needed to find out. So at the age of 37, with nearly two decades of sedentary living as my base, I began to train. At that time, I hadn’t heard of any other raw vegan athletes, and had only heard of one vegan athlete. I had no examples to follow or mentors to advise me, just lots of questions, and a burning desire to see what was possible.

Within my first week of training, I realized that I was onto something big. My speed and endurance were far beyond what conventional wisdom deems possible in such a short period of time and after so many years of inactivity. More importantly, my asthma was gone and my knees and ankles were free of pain. I decided to test my limits and took to running up the steep mountains of the Los Angeles area. Within three months of beginning my training I had established myself as one of the best Mountain Runners in California. In the next six months, I had become one of the best Mountain Runners, and one of the top stair climb/tower racers in the country.

My next goal is to break the world outdoor mile record, and be the first person to break the four minute barrier at 40 years of age. This is not a personal goal, but a wake up call to all the cynics who believe that world class results are not possible on a diet of whole raw plant foods.

    5. Most memorable results or achievements.

1st - US Bank Tower Stair Climb 2007
1st - Palm Springs Tram Road Challenge 2007
3rd US Bank tower stair climb - 2006
    4th American Trail Championships - 2006
    6. Why did you join OA's PRO-Activist team?

My mission is to show the world that athletes who eat exclusively raw, whole, plant foods can not only stand atop the world stage, but can achieve levels of performance not possible on a conventional diet. I hope to inspire other athletes to take up this challenge and leave doping and steroids behind. As this movement grows, my dream is for these athletes to become role models for children, and help to educate people around the world about the benefits of choosing this lifestyle; for athletics is a language that transcends, race, religion and politics. It is a universal language capable of inspiring all that witness it’s expressions of grace, power and speed.

Kilimanjaro.

NMA: When and why did you become a vegetarian?

BY: I become a vegetarian many years ago for ethical and environmental reasons. I love animals and love mother nature.

NMA: How do you feel it’s impacted your performance as a runner? Have you noticed other areas in your life that have been improved by vegetarianism?

BY: I can't say if helped or hurt my performance. I can tell you I love being a vegetarian which makes me feel better and enhances every aspect of my life.

NMA: Do you ever get any “weird” questions about being a vegetarian athlete? How do you typically respond to those questions?

BY: I got yelled at in Montana for eating some of the garnish on the side of the salad bar. The salad bar had meat everywhere. They told me I was eating the decorations!

Why is living organic important to you?

For me it’s all about helping the environment. Chemicals from nonorganic practices go into the ground and affect our water system. We have to get away from the chemicals to truly make the world a better place.

I get harped on all the time when people find out I’m a vegetarian, but really, I don’t eat meat or fish because of health and ethical reasons. Also, the fewer chemicals and artificial flavoring in my food, the better I feel. I buy as much organic food as possible, although sometimes it’s hard when I travel. I don’t want to eat any food that has chemicals or artificial anything; I make a conscious effort to avoid that as much as I can. I think stuff with no artificial flavoring and chemicals tastes better.

What was your favorite food growing up?

I didn’t eat my veggies as kid; my favorite food was pizza. We ate crummy, greasy pizza a lot. If we didn’t have dinner plans or decided to go out for something, pizza always came to mind. Maybe because it’s so convenient—no matter where you are in the U.S., you’re never far from a pizza place.

Now I’ll have a pesto or white pizza. Something with pesto and veggies; sun-dried tomatoes, artichokes, and some pineapple makes a good pizza to me now. When I make pizza at home, I make my own dough and use a lot of veggies, not like traditional pizza.
