    Vegetarianismo y envejecimiento


    Este estudio no nos favorece al relacionarse la dieta vegetariana con un mayor consumo de carbohidratos. Si embargo hay que también tenerlo en cuenta aunque otros factores antienvejecimiento como consumo de alimentos ricos en antioxidantes o la preocupación general por la salud que un vegetariano está obligado a no descuidar, formen parte de otros estudios a favor. Quiero resaltar de nuevo cómo se relaciona un exceso de carbohidratos, presentes sobretodo en cereales, con algo que no conviene en nuestra alimentación.

    BACKGROUND/AIM: A vegetarian diet is known to prevent a series of diseases but may influence the balance of carbohydrate and fat metabolism as well as collagen synthesis. This study compares expression patterns of relevant genes in oral mucosa of omnivores and vegetarians.
    METHODS: Quantitative reverse transcriptase polymerase chain reaction was applied for analysis of mRNA levels from carnitine transporter OCTN2, hepatic CPT1A and nonhepatic CPT1B isoforms of carnitine palmitoyltransferase and collagen (CCOL2A1) in oral mucosa.
    RESULTS: Compared with volunteers with traditional eating habits, carbohydrate consumption was significantly higher (+22%) in vegetarians. This was associated with a significant stimulation of CPT1A (+50%) and OCTN2 (+10%) and a lowered collagen synthesis (-10%).
    CONCLUSION: These novel findings provide further insight into the association of a changed fat metabolism and reduced collagen synthesis in vegetarians, which could also play a role in the aging process. Copyright 2008 S. Karger AG, Basel.

    Una dieta vegetariana es conocida para prevenir una serie de enfermedades, pero puede influir en el equilibrio de metabolismo de carbohidratos y grasa, así como la síntesis de colágeno(...). En comparación con los voluntarios de hábitos alimenticios tradicionales, el consumo de hidratos de carbono fue significativamente mayor (22%) en los vegetarianos. Esto se asoció con un importante estímulo de CPT1A (+50%) y OCTN2 (+10%) y una síntesis de colágeno reducido (-10%). (...) Estos nuevos hallazgos proporcionan más información sobre la asociación de un cambio en el metabolismo de la grasa y la reducción de la síntesis de colágeno en los vegetarianos, que también podrían desempeñar un papel en el proceso de envejecimiento.

    Damage of molecules as a consequence of oxidative stress has been implicated in the pathogenesis of chronic diseases related to aging. Diet is a key environmental factor affecting the incidence of many chronic diseases. Antioxidant substances in diet enhance the DNA, lipid and protein protection by increasing the scavenging of free radicals. Products of oxidative damage of DNA (DNA strand breaks with oxidized purines or oxidized pyrimidines), lipids (conjugated dienes of fatty acids) and proteins (carbonyls) in relation to nutrition (vegetarian diet vs. non-vegetarian, traditional mixed diet) were measured in young women aged 20-30 years (46 vegetarians, 48 non-vegetarians) vs. older women aged 60-70 years (33 vegetarians, 34 non-vegetarians). In young subjects, no differences in values of oxidative damage as well as plasma values of antioxidative vitamins (C,beta-carotene) were observed between vegetarian and non-vegetarian groups. In older vegetarian group significantly reduced values of DNA breaks with oxidized purines, DNA breaks with oxidized pyrimidines and lipid peroxidation and on the other hand, significantly increased plasma values of vitamin C and beta-carotene were found compared to the respective non-vegetarian group. Significant age dependences of measured parameters (increase in all oxidative damage products and decrease in plasma vitamin concentrations in older women) were noted only in non-vegetarians. Vegetarian values of older women vs. young women were similar or non-significantly changed. The results suggest that increase of oxidative damage in aging may be prevented by vegetarian nutrition.

    Los resultados sugieren que el aumento del daño oxidativo en el envejecimiento puede ser impedido por la nutrición vegetariana.
